I have to ask: I know how to wire house fans , lights, run 12/2, and 14/3 wire, 3 way plugs, built too many houses.

Heres the question :? can you hook these things up to train transformers ? where does the ground wire go !!

No...the lights you took down from the kitchen operate on 110 Volts. Your transformer puts out only 18-20 Volts.

They will not work the way they are. You could convert them to LEDs or low voltage bulbs,depending on what kind of fixture it is. Power them with a 12 volt transformer run a wire to it with chain and swag it. A pic of the fixture would help. Converted they would be more for accent lighting than main lighting.
