I’m thinking of starting a layout diary to track progress on my layout. I’m curious if anybody else does this? If so, do you do it via paper and pencil? Text document on your computer? Website? I would love to find an app I could do it with on my phone. That would make it easy to do while I’m working on the layout and I could add pictures. Open to suggestions so fire away!

Same here.
Not me. I guess that makes me a free spirit. LOL
However I have about 2,500 photos and videos on my smartphone, so I guess that's a diary of sorts.
Photos.
Will be photos, if I ever get back to it.
I don't keep a diary as such, but take photo's as I add something or make other progress.
Currently, I'm documenting the "Train-Saw" massacre as I disassemble my layout.

Smarty-pants phone cameras are actually quite good and drop-dead simple to use so I take pics. Lots of them.
I have a quasi-diary going right here on a Topic I started for the purpose:

Only instead of a secret diary anyone can read it FWIW.
Some people create a topic on the forum to track their progress.

I documented most of my layout build with cell phone pics.
Has actually come in handy here on the forum when I get questions from others (Lionel postwar-style).
I documented the entire build, still ongoing, I took pictures put them in publisher along with comments. I then pdf'd each page, printed and put them in a binder. It is now several hundred pages. From the PDF I am able to save them as jeps (pictures) so each page along with comments can be viewed as a slide show. I had the slide show running on my smart tv during a recent open house. See some pages below.
