When I tell people that I use a post war ZW & 1033 transformers to power lights, switches, & accessories, I am told of the danger of not having proper circuit breaker protection.
What do I need, what specs should I look for, & how is it connected to the transformer?

Depending on the smallest size of your interconnecting wiring, you could use a 10 amp standard AGC glass fuse installed in the hot wire as close to the ZW as is practical.
For 10 amp protection, no downstream wiring should be lighter than say 18 AWG.

Using the ZW as an example, you already have a breaker for the entire transformer on the "U" circuit, so you want to protect each A-B-C-D circuit individually, with a rating in line with the wiring and intended load.
I am still amazed that anyone would want to be using fuses and deal with stocking and replacing them.
Use resettable or automatic resetting breakers and save yourself some grief.
