Bought an engine with a Katy coupler on it, would like to pull my rolling stock, but the couplers don't match up, the Katy is smaller and the rolling stock is larger.
Does anyone know how to hook them up, is there a part that I can buy that takes the two different sizes.

The older 800 series Kadee couplers will couple with many traditional claw couplers. Try coupling to rolling stock of different manufacturers. The other options are replace the Kadee with a claw coupler (more difficult) or install a Kadee on one end of one of your cars in place of the claw. Then use this transition car right behind the engine.

That's what I did on my Amtrak train, used a Mail car with the claw on one end and a Kadee on the other end. That way I would not have to switch out the engine couplers.
By the way almost all my rolling stock and engines are switched over to Kadee's!
