Can this engine be converted to a can motor using late model scale Hudson parts? Mounting brackets, maybe err control stuff?

Don't know, but I would guess that, like your guitar, modifying such a nice item would decrease its value. I have a modified 763, and it is probably worth a tenth what a stock 763 is. I also have a stock ES175 in sunburst.
I doubt you can use any of the later Hudson Parts but Frank Timko makes a smaller DC motor adapted to fit that engine. Once you switch to a DC motor then you could use the latest ERR electronics. The motor is the same one that K-Line uses in their Scale Hudson.
Its adequate but don't plan to pull 10 heavyweights with it.
As for losing value, they can be had today for less than 400 bucks. To a collector it may be worth less but to an operator I think the value would be greatly enhanced. ymmv.

You can get ERR boards for the Pullmor motor.

You can but it won't run like a modern hudson.

Not worried about 'value' really...there is no intrinsic value in any of this stuff, it's only worth what somebody is willing to pay. Guitars, which are really tools ( think snap-on, Kennedy, craftsman...etc) I modify them as well to suit me...somebody else can fight over it when I die. I am looking for cruise-ability without paying 1500 bucks to get it. This particular engine is cheap, relatively speaking. No features, but all that extra stuff isn't necessary for me. Give it a light, some smoke, make it chug, run smooth and somewhat of a correct speed for what it is...and I am happy! That being said, I didn't think they had cruise for the Pullmor motor...
Btw...es175 is a nice ax...got one too, but have it put away. These days playing a low-dollar les Paul, firebird, and a strat.

The les Paul in the photo is an 82 I bought new when I was 19...changed pickups ( has some super something from back in the day in it) put on locking tuners, schaller roller bridge, tp6 fine tune tailpiece...suits me...
