Why did MKT do from the red and white colors to green and yellow. The later made the railroad look as it was controlled by John Deere.

Answer: Men doing their jobs.
From Missouri-Kansas-Texas Lines in Color by Raymond B. George, Jr. Morning Sun Books 1994.
"In 1971 Chief Mechanical Officer Martin F. Rister and Katy Purchasing Agent Charles E. Reasoner were given the task of selecting new colors for Katy rolling stock. Rister and Reasoner worked directly with DuPont Corporation in choosing the new green and yellow combination and pigment formulas. After approval by President R. N. Whitman, Rister and Paul Leary of the Parsons locomotive shops developed the locomotive scheme using GP-7 #123 as the prototype."

Got a question:
Recently I purchased an O scale 2 Rail Old Pullman boxcar Kit on ebay. It is an unassembled Katy unit with Yellow sides and silk screened Katy lettering. If the other color is supposed to be Green, then I am guessing that the ends are green and possibly the roof. True or False?

Katy did have some YELLOW boxcars for head end passenger car service. Cars were solid yellow with black lettering. Some have Railway Express Agency on them.
