Hello just picked up an MTH Premier SD-70 where the box says Scale Wheels but the locomotive has 3-rail pickups installed.
I run scale wheels so is it just a matter of removing the 3-rail pickups? Is there anything electrically that I need to do to the locomotive?

Flip the switch to 2 rail
It'll run on 3 rail with the scale wheels installed if your curves are O72 or larger. If you want to run it on 2 rail, just unscrew the rollers and flip the switch under the fans to 2 rail (and probably also from DCS to DCC).
