The structure is finished in our new home and now she asks “how are you going to put the new blinds up on the window?” I replied “it’s strong enough for me to be on it to install the blinds”. 😬😬😁😆 I’m just happy I’ve got this part done. I’ll figure out the blinds when they are delivered.

Congrats on having a nice space for your layout.
Next thing she'll say, awhile down the road after you've laid track and built scenery, is "those blinds are dirty" or "time for new blinds". Don't ask how I know this.
Not a fan of long reaches. A topside creeper can help, but it's a pain to work while you're on one, and they take up a lot of space to store.
what is your track plan?
As long as you can put a couple knees on your table top the access to the blinds will be fine. Don’t listen to the naysayers, most of them have never built a layout anyway. Keep going and have fun.

Your track plan with elevated tracks and several reversing loops will add interest for visitors and challenge the four trains running simultaneously. The daily pleasure of running trains for fun will offset the occasional pain of attending to the window blinds.

Are you putting any other support or facia along the plywood edge?
I am building this U shaped layout and these 2 spans will hinge up 90° and have MTH steel arched bridges on them. Not sure if this idea would help you..
