The time to replace the wick is when it stops providing decent smoke. I wouldn't worry about the color until it no longer performs. Just being brown isn't much of an issue, when it gets cooked around the smoke resistor, then it's past it's prime.
Lionel and MTH both sell wick for their smoke units, and of course you can use it in other smoke units as well. There are a host of other substitutes that have been used with varying levels of success, Tiki torch wick, fiberglass insulation, etc....
It's not time to replace it yet.
Depends on what you buy. The MTH wick is AA-0000001 and costs $2.
Brown is no problem as long as it's still absorbent. When the wick is hard and black, that's when you need a new one.
