I dimly recall that K-Line had interiors that would work for 18" and 21" cars. Perhaps someone can provide a source for them. Making them work (match window spacing, and so forth) will be something else.
Why not buy whatever interior components you want and mount them on an appropriate thickness sheet of styrene? That's what I'm doing for my Mac Shops 21-roomette sleeper. Delta Models http://www.deltamodelsusa.com/#! has an extensive line of resin parts that you can use; they are pricey but very nice

That is exactly what I have done in the past for interior seating, etc.
