You want ac. Some transformers have fixed accessory outputs, but the wattage is limited. Some may correct me but the z1000 brick i think has a fixed output of 14v @ 80 watts. My guess is the z500 does not have this feature. The plus with a transformer is your log ramp or barrel loader may like 12 volts and not 14 but your z stuff machines will be fine with 12. I have 3 accessory voltage buses, 10, 14, and 18 (those bubbling tubes are a pita).

Depends on the accessories. Some like AC, some need AC, some will work with DC, some need DC. Some need a specific voltage, some will take different ranges.

Example- fastrack switches technically need AC for full function. They need the AC to generate the positive and negative voltages for the red and green LEDs on the remote controls. They can work with DC, and depending on what polarity one or the other colors work.

I agree with John , 12 to 14 volts  is usually the norm. I have a separate inexpensive ac transformer set at 14 volts for my switches, which are Z- stuff switches that I control with my cab 1L. I also have another separate small ac transformer for lights and accessories, which is set for twelve volts. For my track power I use three Lionel 180 bricks, with a Tpc 400.
