I want to replace a crossover assembled with two Atlas O 7.5 switches with a couple of Ross switches.

Which Ross switch would most easily fit the bill...a #6 or #8...and what type of track adjustment do you think I'd need to make?

It depends. A pair of Ross #8's will do the job, but you'll be looking at a longer overall length for the crossover. If the length of the crossover is an issue, a pair of Ross #6's should work. In either case, you'll need to do some cutting and making some fitters. You can use Atlas joiners with Ross turnouts by cutting the stringers at the end ties and sliding them back and the Atlas joiners will slip right on.
