I was just wondering how, during modern excursions, ash is dumped and/or removed from coal burning steam locomotives when they are away from their home base? I assume most facilities today wouldn't have an ash pit.

Generally, lots ow water used to wash-out the locomotive's ash-pan, which dumps between the rails. Since I've never worked on a coal burning main line steam locomotive in the "modern era", I don't know how the ashes are removed from the track.
