does anyone know if there is a price and rarety guide with plenty of photos for sunset models that goes from 1975 up to the early 2000s like maybe a greenburg's guide or TM book ? that i can look for next time i go to a train shop

NO Such luck with a rarity guide. There was a price guide for 3 rail locomotives in the last century but it is dated now!
This guide will NOT have K-line items in it due to K-line doing their own "Collector's guide" book on their own products.

i have the top one but not the kline one however i was looking for one that focused of scott mann's sunset models from 1975 onward
Probably your best bet for determining value is to search completed listings on eBay. With few exceptions, 3rd Rail holds value pretty well.
You might try brasstrains.com. The guys that run this website buy and sell brass in all scales and are very knowledgable. There is a brass guide which you can search by scale, importer, road, etc. You have to register in order to see prices, but its free.
