I have a fleet of GGD heavyweights and head end cars. I'd rather not switch to Kadee couplers, but I need to find a way to uncouple them in order to simulate prototype operations. They have the oversize 3 rail couplers, but no "thumbtacks," so I can't use a magnetic uncoupler. Any ideas?

I have many 0f those cars and just make up the trains with a MTH head end car on so the train can be uncoupled from the locomotive. I am not a fan of those couplers but can live with them as they are body mounted. Being body mounted helps the train to back into the station yard with no problems.
If your plan is to break up a consist. There is a possible solution. The Weaver Flyer coaches featured a self centering 3 rail coupler with a thumbtack. It featured a bracket that was secured to the metal frame of the car with 3 screws. The coupler was secured to the bracket with a T Bar and clip. Much like a standard engine would have. I have converted to Kadee's long ago and have a small supply of these. On a quick look it appears to be a simple bolt on after drilling 3 holes in the heavyweights chassis. You may have to play with it a bit to get the proper height.
Another option would be. Is using a Lionel coil coupler in this bracket. I'm guessing there are boards still available for this and could be hidden in a drawing room of the car. The Weaver couplers will probably take some force to close. The coil couplers may work a little smoother.
