Reading an article about British trains and I see the term up and down trains, mostly having to do with London ones. So what is up down trains as related geographically or physically direction?

In the context of British operations, trains traveling toward London are UP while those headed away from London are DOWN.
Also, if trains are traveling on cross country or other lines whose location is not near London or traveling along them will not bring a train toward or away from London, the terms UP and DOWN will be determined based upon a designated principal station for that line or line(s).

Southern Pacific used a similar method of designating timetable direction. Trains traveling toward San Francisco were westward and vice-versa. The actual compass orientation of some Espee routes was north and south, but all subdivisions used east or west, determined by the above method.
