Wouldn't be easier, to just automatically give your customers 20% off on all orders received. Regardless if they phone in the order, do a website order or come into your store. Why do they need to enter the code word Turkey.

Yes it would.  good question.  Its not by choice.  Its how our commerce system works. We don't have the ability to make it an automatic discount so that's why we use the promo code.
