Instead of a straight table I think I want to have curved sides that follow the railroad. Can someone explain or post a couple of pictures of how to accomplish this.

Not exactly sure what you mean, like this?
The bench work was square, but the fascia board is curved.
It's just a matter of putting your braces where you need them and the length you need to make the curves.

Easy to do with L-girder benchwork. It is basically joists laid down on two long parallel L-girders. The ends of the joist can be cut different lengths to create any curved edging you want. The fascia (edging) itself is thin masonite that can be bent to any curve. It is attached to the ends of the joists.

allow the the laterals for the top deck to run long then cut them off later as you form your curves. If you click on the link below there is a few pics at the beginning. Good Luck!
I believe you have all the help you need in the above posts. I too enjoy the interest created by an irregularly shaped layout.
