I've noticed that some photos posted on the forums have a notation that they are copyrighted. How do you get that information onto the photo?

The photo and movie editing software, "Media Impression 2," that came with my Panasonic DMC-FZ35 lets me put text on photos, including copyright. I imagine most modern editing softwares will do the same.

I host some of my photos for free on J&C Studios(JohnBoy's site) and the copyright is an option when saving your photos.

All photos posted on any web site are copyrighted. It's the law. They don't have to say anything about being copyrighted. It's complicated, but you can't sell or use someone's photo to make money. But lots of abuse of course. I'm not sure most lawyers understand everything about this issue.
There is the fair use doctrine.

Under the fair use doctrine of the U.S. copyright statute, it is permissible to use limited portions of a work including quotes, for purposes such as commentary, criticism, news reporting, and scholarly reports. There are no legal rules permitting the use of a specific number of words, a certain number of musical notes, or percentage of a work. Here is one way to do it.
You can also just edit the photo with the Paint program that comes with Windows and add it manually using the text feature in Paint. The Copyright symbol ( © ) can be added in any text operation by holding down the "Alt" key and typing (without the quote marks) "0169" on the numeric keypad on the right of the keyboard (do not use the numbers across the top).
