I bought a Lionel Burro Crane but haven't figured out what to lift or drop off while using it.  I tried lifting trucks from a Lionel postwar flatcar with truck load but after picking up the truck as soon as the crane turned to one side the whole burro crane fell over!  I guess the burro crane is top-heavy or something.

Since lifting trucks didn't work very well, what do people use their Lionel Burro Cranes for (without it tipping over)?

Lionel marketed an AEC Burro crane set a couple of years ago. It came with two gondolas, so I assume it can pull at least two modern era cars.
The original burro crane only had one driven axle, and no traction tires.

The modern era burro cranes are constructed the same way.
They may or may not have traction tires, I don't know.

I have a 18402 burro crane on my bench, it does not have any traction tires.

Be aware that the motor is light duty, I would not expect it to pull very much.

Years ago, I picked up some cheap four wheel MPC gondolas for the kid's layout.  I took the bodies off of two of the cars to make the flat cars.  The remaining gondola was fitted with a piece of foam insulation board that I carved and coated with ballast.  The whole train only weighs a few ounces so the burro has no problem pulling it around.
