I tried to interest microstru in producing the Greyhound running dog sign.  They were aware of it but didn't think it had enough animation.  True, it only has to positions, but when lit, it shows the dog running realistically.  This sign still exists in Pocatello, Idaho where I live and I'd love to have a model of it on our club layout just a block away.

If the sign has to have a color change or animation, there could be a rectangle outlining the sign like on the typical Soo Line herald of that time period, then the background and the graphics can alternate between Red and White. Sometimes the background can be red and lettering can be turned on in white, then the background can turn white with red lettering turning on letter by letter.

I'd say that you can't have enough. Especially considering if you use their small window signs in restaurants, gas stations, and businesses of every nature, as most real businesses have some type of lighted sign, you can't have enough.
