I am about to install telephone polls on a new section of my layout. Mostly rural road, what should the distance be between polls and what looks good as telephone wire.

Scale distance in the real world for rural spacing is 150 to 200 feet but that's not going to look right to most modelers . 80 feet or 20 inches tops is going to be about all you want to do.
You can use real copper wire or black or silver thread for wire.
I even thought about a dark green to simulate old copper.

This is a sidebar, but, in the days before distance counters became part of the locomotive control stand, I used to use the pole line to tell where the rear end was. Leaving San Bernardino in both directions, we had a curve with a speed restriction. I counted poles until the Conductor called "'Round the curve," from the waycar. After that, I already had the engine in Run-8, picking up speed, as the waycar left any speed restrictions.
