For AC accessories, I'm using K-Line PowerChief 120F transformers.  They have fixed taps that can provide 3, 5, 8, 12, 15, and 20 Volts.  You can wire directly to the pins or use banana plugs.  Below is a drawing of the taps.  I think you can still find some of these around.

For all other DC powered items (accessories, lights), I use regulated commercial power supplies.  These are readily available, inexpensive, and reliable.  Yes, you can convert old PC power supplies to this purpose, but they need a load to function properly.  IMO, not worth the hassle.

Every bulb & motor, etc, has an amp rating. Just add that need up and add 20% more to get the supply needed (watts@ X-volts can be broke down to amps, Any two w/v/a gives you the third.) 

I would look at at least 90w or about 6a. (1033,1044) 125w LW, 180w KW, 180w VW, either ZW , Z,V, (maybe T,RW,R,S, etc.. prewar)

Using a power brick alone is ok too. You may want to add a voltage drop with paired diodes (-0.7v each pair)
