I received 5 of these building kits and want to start working on them. My wife has a large collection of Acrylic hobby/craft paints from Michaels, they clean up with water, and a large set of brushes to go along. What, if anything, would I use to prime them then seal after painting?

No need to prime them. Most if not all come in a gray color. I would wash them off with a dishwashing soap and let dry. I've used all kinds of paint on them. From flat spay cans to airbrushing. It has been my experience that acrylic paints do not adhere well to plastic. I always prime plastic with Krylon or Rust-Oleum white spray primer. Like Don said, always wash plastic with dishwashing soap before painting. That removes the mold release compound and any oils from handling.
I've used the acrylic paints from Michaels on the Ameri-town buildings with great success. The white, off-white are perfect for the mortar joints. I have also sealed some of the buildings with Testors Clear Coat or Dull Coat.

I like to prime, too. It's not that hard to do and does make all paints adhere better.
I painted 24 of those buildings using sample sized jars of Pittsburgh Paints in acrylic. I did not wash and did not prime. I used a brush on all of them and they turned out great!
I like to use Polly Scale (No longer available) or Badger Model Flex. Some railroad colors are available in Testors Model Masters Acrylics.
Before I paint a styrene model I wash it with warm water and a mild detergent to remove any mold release, then I scrub it with Ajax cleanser and a tooth brush to provide some tooth for the paint to adhere. Make sure you rinse it well.
Acrylic hobby/craft paints do not adhere as well so I definitely would prime it first.
