The current president of Amtrak doesn't seem to desire ANY "special trains", no matter whether they would make a profit for Amtrak or not.
The former operators of the American Orient Express figured out how to make a small fortune running their trains.
Start with a big one... 
Expensive "Orient Express" type trains, and delays that are common with freight operations, don't mix. It's bad enough to have Amtrak's "Silver Liners" arrive in Miami 3+ hours late.
Canada has figured out how to make it work. The Rocky Mountaineer is basically the same concept, operating mainly between Vancouver and Banff/Lake Louise. Not saying it's easy, but they seem to be making a go of it.
