I've used liguid nails and Elmers glue on the 2" thick foam sheets before...takes a while to dry...has anyone used hot glue or would it melt through the foam and make a mess and fumes? Any other glues used. This foam comes in 3/4", 1" and 2" thick panels used for insulating walls and ceilings. Its the fairly rigid stuff.

You can hot glue it, but if you have a large surface it’ll cool before you finish laying glue down. Even if it does melt a little, it’s irrelevant because you’re pushing panels together anyways.
I have glued layers of pink foam together using a combination of epoxy and yellow carpenter's glue. I used this approach to construct elevated terrain on my current layout.

I use expensive spray contact glue. Check out "Hot Wire Foam Factory" they have a bunch of different glue for foam and coatings also. They are very helpful on the phone also
after reading a reply to my post, I went out and got what should be the correct glue for it. It was called blank blank "for projects" and listed the foam board right on the label so I bought it. Just the other day I re-read the whole label and it says "not for gluing foam board to foam board"! Whaaa?
So I'll go back to using whatever regular caulk is open at the time. When I need the panels to stay in place, I just add tape and remove it later on. You can stiffen the joint later by adding more caulk, or hot glue (or even spray foam?) in the joints.
The spray foam is from another reply and I haven't tried it yet.
Low heat hot glue works well, but work fast if it's a larger glue job.
There's actually a special glue that comes in caulking gun tubes, made just for foam. I think it's a Liquid Nails product. Works great.
It's what I used to build this:
If you look closely, you can see a little blue-gray at the seams. That's the glue.

I use Original Gorilla Glue. Just apply a light mist of regular tap water on the surfaces you wish to bond, add the Gorilla Glue and either clamp or weight the pieces together. This stuff works great and allows some "working time" as well. I use it on my foam terrain and such.

I've been fine using Liquid Nails. On the thicker pieces a drywall screw here or there will hold everything together while the glue sets. Remove screws later or not.
There are several liquid nails products. The one to use for foam is called liquid nails for projects.
