I built a 5 deck 027 layout which I call "The Crazy Train". To prevent derailments, rollovers and falls I built some guardrails from 20 gauge galvanized steel "L" brackets (which I fabricated) and monofilament fishing line. It works really well. See the pictures below.

I am going to build another larger 4 deck layout with 031 track.

Does anybody have any ideas for easier alternative railings?

I like your solution because it's visually unobtrusive-- it doesn't obscure the trains.

The only other thing I've seen like this is Plexiglas (or Lexan) panels, and there are a couple of different ways to mount those.  I can't imagine that Plexiglas would be any less expensive or less work, so if you have more of the brackets, I would do the same thing on your O31 layout.

Here is the Crazy Train with all five decks in operation. I have a Marx 999 train set on each deck with a mix of Lionel 35 and 45 watt transformers for each deck. These little transformers are perfect for this application.

The guardrails provide real peace of mind - that the locomotives wont fall to the floor and break.
