I have two Lion Chief (not Plus) sets. Is there a way I can find out if they will be compatible with the Universal Remote?

All Lionchief products are compatible with the LC Universal remote.

There is, I believe, at least on exception. An early Thomas as I recall still doesn't work with it. However, virtually all LC and LC+ stuff should run with the Universal Remote.

If your Universal Remote has the firmware update to version 1.1 then you shouldn't have a problem with any lionchief engine ever made except a few variants of the very first Thomas engines that would require a board swap.

The Universal Remote can be updated to for free using your smart phone and app available from Lionel.

I have two of the early Thomas engines. I can confirm they do not respond to the Universal Remote.
