They are just a standard SPDT or SPST switch (depending on variation) - nothing special. It's cousin, the 390C is a DPDT switch.
So I have one and I want to take the backplate off. There is one “rivet” holding the plate on, when it should have 2
is that really a rivet and can I pull it off with a needle nose pliers?
They are just a standard SPST switch. Depending on when they were made, it may screw together or be pinned(pull pins straight out to disassemble).
The SPDT version is actually a 148-100, but a 364c can obviously be made into one functionally by adding the "C" contact & screw.
The HO 390c DPDT has all 6 contacts & screws, as well as an additional sliding contact & spring, and also can be made from a 364c with the parts added.

Twist the "pins" as you pull. They are steeply(very very coarse) threaded push screws; maybe one revolution to totally unscrew them.
