I know they make some engines but do they make a large variety of cars and accessories also?

Not a large variety, no, but some - very limited.
No only a couple cars have been made. No accessories
There is the Cattle Car with advanced mooing features and the extremely hard to find 30,000 gallon ethanol cars that make bumping, scraping, braking sounds. Those are the only ones I can think of. Not sure what you are looking for but if you are just interested in premium rolling stock, in my opinion the TMCC/Legacy crane should have vision line status and offers much more play value than either of the vision line sound only cars.
There's the new PFE Reefer set with sounds in the 2014 Catalog. I don't know if they're considered Vision Line, they're on the same page as the Big Boy.
The real triumph of the Vision Line series is this one.

On the product page on Lionel's site they are listed as Vision Line, but in the Vision Line site they are not listed with the other cars, but the Big Boy is listed with the steam locomotives. SO who knows.
