I know some of you guys work on MTH engines a lot, maybe even for a living. (Techs) what trick do use to open, or separate the two wire plugs. I know when upgrading or swapping boards there’s a few to do.

I generally stick a small screwdriver here and give a twist to open up the tab. Then I pull the plug apart. If it's stubborn, I sometimes put the screwdriver between the white and black and twist.
This is the locking tab. As Bob says, you can slightly expand the connector with a flat bladed screwdriver to ease it out. For my test cables, I've cut that little tip off to make it easier to remove the connectors.
