I have an MTH RailKing Seaboard Alco RS-3 that has gotten to where it has to be "found" every time to be able to run. All functions operate (movement, lights, sound) but if you interrupt power, the engine becomes "lost" and you have to do a delete/add to make it work. Have tried reset to no avail. Suggestions for fix?

The DCS add engine function REQUIRES a functioning super capacitor or battery system in the engine. The address is not stored in memory until the engine does a shutdown process powered by super capacitors in PS3 or a battery in PS2, or BCR.
Again, would let a tech look at it.
The assumed other fault we would see is sounds and lights cut off instantly when power is dropped.

Didn't get it fixed. The RS-3 is now a dummy. Had sent it to a guy in NJ who said he could fix it but he didn't know how after all. It was a PS-3. Had a second engine (a PS-2) that was sort of doing the same thing and it fixed itself. I set it up in a lashup and it worked just fine. Then after a couple of months, could take it out of the lashup and it started working just fine.
My only other engine that quit working was an Atlas with TMCC. Can't address it. It works conventionally (sort of). Will just have to get some new innards for it.

I think you're doing this stuff the hard way. For instance, the Atlas engine that you can't run in command certainly doesn't need a total electronics replacement, most likely it has either an antenna issue or the R2LC has a problem. It's too late for the PS/3 apparently, but that should have been a fairly straightforward repair as well.
As for your description of the PS/2 problem, that sounds like a bad battery.
