Well not knowing what track system you plan to convert to here is one option.
The new American Flyer Fastrack works great for me on my updated layout.
I eliminated all Gilbert track.
You can transition from old Gilbert to new Fastrack with the Lionel S 6-49858 American Flyer FasTrack 5" Transition Track:
If you like the new molded roadbed look of Fastrack it is available now in 10" and 30" straights, O-40 (or so) curves, 10" terminal track and more to come.

MTH will issue their version of the old SHS Track probably this year.See the 2013 catalog. It is nearly identical to Fastrack.
Another good choice is American Models track.
They have a good selection of a complete track system.
To join AM track to old AF track you can use track adapter by MTH (if they ever issue them) or if you find a stash of old SHS track parts they also made these adapters.
In any event the AM track requires a user installed roadbed.
