If I connect (2) Lionel 6-37191 36 watt power supply to my track, is that enough power to run a Lionchief engine?

1 is enough for one powered engine if you need more power for passenger cars and such it’s time to start looking at other transformers. I wouldn’t dare try to hook up 2 of those without some sort of breaker. At that point it’s just easier to get something that’s built to put out more power.
if your needing more power what exactly are you wanting to operate on 1 said track?
You might set up an experiment to measure the number of amps it's pulling. Volts x Amps = Watts. IF I were in your place I would just invest in a better transformer. You will need it anyway if you expand your layout.

Get a transformer. No, you don't need a high end model. Ditch those wall warts!

Yes, two 36's will work. Put them with their terminal tracks at opposite ends of the layout to minimize power dropouts. You will have two 1.8 amp breakers in parallel working for you... if the short exceeds 3.6 amps, they will both trip, like a 74 watt power supply with just one breaker.
