what is the best Z power brick to use on a small temporary layout that will only see 1-3 power units using DCS? There would be just one power unit, then maybe 1-2 power units lashed together. Noticed the Bricks range in volt output, how much is too much, how little is to little.

There is never such a thing as too much. I would say the 750 or 1000 bricks should do the job for what you want.
I have run 2 trains with 6-8 cars using a Z-1000 with no problems. I think it would be able to handle another engine and some more rolling stock. I don't have a Z-750 so can't compare to that one.
I bought a BRAND NEW Z1000 on Ebay last week for $40. plus shipping from someone in NJ.
I have run 10 engines at once(2- 5 engine mu's) pulling combined 60 freight at once with a single Z1000...pushing the limit yes. Did this for 3 years. I now use 2 Z1000, one per each fixed channel.
The Z1000 for cost and the fixed Accessory output - The Lionel PH180 for max track power - 10 amps (an adapter cable is available to connect to the TIU)
As Moonman says above, the PH-180 might be worth it for the breaker alone, it's has possibly the best one available for our trains. Not to mention it has the most power of any others available as well.
