Can a Lionel whistle relay (WSR-1?) be affixed and wired to the whistle unit in a No. 125 Whistle Station so using the whistle button on a transformer would activate the whistle unit (instead of using a No. 90 momentary switch)?

Sure. It's a relay. Relays can and do replace manual switches.
FWIW, I know people who used them to add electrocouplers to engines for remote controlled activation.
You can control most any load- everything from a light bulb to a whistle motor.
So, is WSR-1 the correct (and only) relay part number suitable for this task? I noticed there are many different whistle assemblies used in tenders (WS-85, WS-125, WS-175, WS-200, etc.), but I'm assuming that only accounts for the material (metal/Bakelite), orientation (horizontal/vertical), and possibly size of the whistle chamber. The motors and relays all look the same.
