I'm interested in the new LC Metro North set and was wondering if anyone knows the height from the base to the doors so subway platforms can be made.

To help you out a bit, if I recall, the distance from the base of my FasTrack to the door base on the subway car was 5.4-5.5 centimeters, which according to a calculator works out to about 2-2/16 inches. I'm thinking of doing the same thing you're doing. I can verify the height when I get home from work provided that you haven't received the answer prior to then.
For high level platforms, I've always used 1-1/2" thick lumber for the base (a piece of a 2x2) topped with a piece of luan plywood which is just under another 1/4" in height.
Not perfect, but easy and not bad looking.
This is for Gargraves track with no roadbed. For Fastrack you would have to add some height for the plastic base.

So I measured and the door base is approximately 2 inches (5 cm) above the Fastrack base. Technically its 1-15/16 inches (4.9 cm), LOL.

It sounds like adding another layer of 1/4" plywood between the luan and the 2x2 would just about do it for a Fastrack layout.
One thing I found out was that clearances are critical when there are high-level platforms on both sides of the track.
If I made the path between platforms wide enough for steam engines or big diesels, it looked terrible with the passenger cars and riders would have to jump across a two foot gap to get on the cars!!!
That is why I made mine a stub end terminal where I could keep the clearances tight and have all trains back in except on the outside tracks.
