Well, all is not NYC, Pennsy, or ATSF. The Uintah is in a deseret area that is not easy
to traverse if you want to follow its remains. Before the interstate system, in the 1950's, to get from Louisville across the Ohio River into Indiana going west, you had to
rumble across a big iron bridge shared and owned by the K&IT RR, one I actually
know little about.

I have a few that I like to pay homage to because they have all been worked on by my family and I at one time or another: Seaboard,Virginian,Southern,C&O,DT&I,N&W,Chessie,CSX and NS.
Do I really have a favorite....eehh hard to decide .
I think I tend to favor the Chessie a little though.I know my late father really enjoyed being an employee during those years of operation.And I always enjoyed the colors and Chessie herald.
Guess I could include the two short lines my layout is based from,The Eastern Kentucky and the Scioto Valley railroads.
Somehow as part of the insanity of this world. The Montour, Pittsburgh and Lake Erie, and Western Maryland Railroad have laid the foot print for a wonderful national treasure, that along with the C&O..... Canal path allows for a bike trail, Pittsburgh to Washington DC. Great Allegheny Passage.

I tend to prefer the longer un-abbreviated names such as the 'Atchison, Topeka, and Santa Fe Railway' as opposed to 'Santa Fe', or worse, 'BNSF', which just screams modernism and cost-cutting. An exception would be 'Nickel Plate Road' over its formal name.
However, I think my favorite name (not railroad) is the 'Reading, Blue Mountain, and Northern', partly due to having spent a significant amount of time on the Appalachian Trail and ended a 26-mile day of hiking to find myself in Port Clinton and the rail yard at dusk... Will never forget that experience, and the 'Blue Mountain' part is very significant to my mind.
I am a modern man myself but my favorite lines, or big 3 systems, are:

For Passenger: Amtrak
For Transit: MTA (NYCT)

Do you have a subway on your layout if I may ask? The reason I do, is I happen to think subways, particularly NY subways are cool.

In my opinion, I believe virtually EVERYONE has misinterpreted the original posters question, i.e. NOT your favorite railroad that you try to model or collect for.
His ORIGINAL QUESTION was "Favorite railroad name?"
Hot Water, I guess if I have to decide on one this Christmas, I'll go with C&O, had better steam engines. Hated their passenger colors though, but he didn't asked that did He.
I like PRR and NYC..... I also like ATSF (BNSF) and UP...

Dang! I forgot one, in the narrow gauge category, the road with the stone water
tower bases that I have adopted as my standard: The Denver, South Park, and Pacific.
(also has the still standing stone roundhouse SW of Denver)
I am surprised there aren't many "Wild Mary" fans out there !!

Even though I don't model it I have always thought the coolest name for a railroad was The Nickel Plate Road. It's a very unique name. I like Raritan River too. Most railroads are named after a state or city. Being named after a river is not as common as a city or state.
