I am planning a trip to Horseshoe curve in the near future does anybody no what days are the busiest for freight traffic.

Generally speaking, the latter part of the week is the busiest. When we have been to the curve in recent years, the morning sees quite a few trains with a lull about mid day. Mid afternoon things start to pick up again.
And, if there is any major mow work east or west of the curve, all bets are off.

About the only time it is "slower" is Sunday and Monday. Note that slower is a relative term: lately it's been crazy busy!!!!
