I don't know about #1, but for #2, I would look into GRJ's lighting kits/modules from Henning's Trains: Passenger Car LED Lighting Kit @ Henning's Trains I think you can get the full kit with LEDs or just the modules alone.

If you don't mind soldering, the lighting modules are half the price of the full kit.  You really just need the lighting modules and a roll or two of the warm white LED strips and some wire.  The kits are designed to be solderless so most anyone can install them.

2. What size wire do you recommend and what LED strip do you recommend?

You can order right on the website.  You can use any size wire you have, I use #28 stranded for most LED hookups, just because it's finer wire and I don't need anything thicker.

ebay: 282151578692 is a 5 meter reel of warm white LED's for $4.78, free shipping.  That will do around 11 18" cars.

#1: Blue seats are from the latest rebuild that placed LED signs and power outlets at each seat pair. Haven't seen any of the others since 2005 or so.
