I want to put a sealed beam insert into the mars light for one of my engines but the current lens is set up in a way it wouldn't be visible if I stuck it in now. How could I remove the old lens and where can I obtain an appropriate replacement?

The engine type may help for better answers.
I've tapped out(driven with a dowl or punch) and drilled out the old ones and used a Dremel to remove adheasives and plastic lens from the lens seat.
Modeling canopy and lens maker/cement might be useful. It becomes crystal clear after a while. (milky until 100% set and dry... some parts take days or weeks to clear but they will)
Try a company called MV LENS. I have installed these on several steam and F and E diesels.

Perhaps if we knew exactly what locomotive you're working with, we could be more specific?
It's an MTH Premier SP GS4. Trying to get it to look as close as I can to the excursion look of the 80's and 90's.
