I currently use my iPad to operate my layout. My daughter wants to sell me her MacBook Pro (she got a new one). My question is, can I operate my layout with a MacBook Pro? The bigger screen would be cool.

The MTH DCS WiFi app won't run on a MacBook Pro. So that method won't work.
There is a post on the forum about using a computer to control DCS, but that solution wouldn't work directly on a MacBook Pro without loading windows onto it.
So id pass on the MacBook. Don't feel too bad though, she can get a pretty good amount by selling it on Craigslist
I have Windows 10 installed in a VirtualBox virtual machine running on my MacBook Pro. It's free to install.

This is true, but since the MacBook doesn't have a touchscreen, the user is required to use the trackpad to select and operate the buttons of the app.
To the original poster, I think if you want a bigger screen, the large iPad Pro is a better way to go for about the same price (depending on how old her MacBook Pro is). This way you get lighter weight, touchscreen, and same ease of use that you are used too

I have a MacBook Pro. and no you can not use this computer to program your TIU for DCS-WiFi. My son came over with his PC - Lab Top, and he program my TIU and did the up-grade to the DCS-Controller.
Now for the good news, the chatter on the Apple Forums, is the next generation of MacBook Pro and MacBook Air, will have a touchscreen. If this becomes true, things means that any APP that works on an iPhone, Like Lionel's, new LionChief Bluetooth APP, will work on the next generation of MacBook Pro & Air.
The Apple company is hard to pin down on future products, I would like to replace my MacPro but waiting to see if Apple, changes to a touchscreen.
This could happen as soon as August 2017 - for the start of the sales season for college students, but others say Apple has a hidden agenda for not making this upgrade to a touchscreen.

Actually, with the addition of Windows via Boot Camp, Parallels, etc., you most definitely can upgrade the DCS software on a TIU or DCS Remote. Further, to upgrade a WIU, you don't need a Windows environment, rather, all you need is a Mac-based web browser.

While this would be nice, let's be clear that, at present, this is purest speculation.
Have to agree with Barry, the Apple O/S is not really optimized for touch or running apps, and the phone O/S is not set to do heavy computing. They only did the touchbar in 2016 while everyone on Windows have the second operating system optimized for touch (win8 and win10).
So even if the MacBook got a touch screen, it would not run the phone/tablet apps.
