I have a K Line Mikado here that is only picking up ground through the drawbar from the tender wheels. Is there a wire that I can trace for continuity from the loco wheels? Or is something fried? The other weird thing that happens is that because it gets sporadic grounding, the coupler fires open by itself every time the ground is not present.

Look at the circuit board that the coupler wires attach to. On certain K-Line engines, a trace blows on the board and that causes the coupler to open intermittently.
It's probably a trace that goes to the third rail. That trace likes to blow on Williams reverse boards, too.
