Can someone point me in the right direction to some kind of manual or chart that identify the CV's for an MTH PS3 diesel in DCC mode? Basic stuff like shutting off smoke, changing lights and/or sounds and other programming features.

Ray's Electric trains has an example of an engine's CVs. They are in any MTH engine's online instructions. Use the model number on the MTH site and click support: then instructions (looks like an open book)

That MTH DCC manual recommendation from Engineer Joe was right on. The list of CV's in the manual looks a lot like the CV list with SoundTraxx. Setting the BlueRail APP to Tsunami2 would probably be a good start in the initial setup.

I'm gonna play with it this weekend. When I hit the "Short Bell" button, the engine shuts down. I also need to figure out how to shut off the smoke.

I wonder if you can move the F functions so they do what your remote says? The smoke info posted below is from Ray's site about a PS3 one gauge diesel:
Smoke (if Equipped) F12 – Smoke On/Off. Enabling F12 will turn the smoke unit on. Disabling F12 will turn your smoke unit off. F13 – Smoke Volume. There are three smoke volume levels in your MTH PS3.0- equipped engine – Low/Med/High. The default for this is set to High. You can adjust the smoke output (amount of smoke the generator puts out) by pressing the F13 button twice. This sets the level to the next step. For example, if you are currently at the High smoke output level, pressing F13 twice (toggling it on then off) will set the smoke volume to Low. Pressing F13 twice again will set it to medium

You can, the manual gives the needed information in the back. I have yet to do so myself, but I plan to do just that myself, as well as move the functions I will use higher up, like that short horn.
The BlueRail folks gave me an easy way to rename my function keys in the app to match the MTH DCC F keys. More to come.
