What is the best over all glue for building wooden structure kits?

Any wood glue will work. Aleene's tacky glue works great.
I use what Dennis Brennan has recommended for wood joints in his Frank Ellison series kits, Titebond II and it’s available at my local Home Depot and Lowe’s.
I have been pleased with it and currently use it for all my wood joints.

Elmer's white glue is good for most applications. Titebond Professional (yellow glue), a little more grip/staying power. Yellow glues would require some clean-up. IMO, Mike CT. Both are available at local hardware stores.

Just prepare for clean up and clamp the pieces until the glue sets up.
I use Titebond II yellow carpenter's glue. Perfect for basswood structure models.
