The Penn Central colors are Dirt and Grime
Colors can be different shades of green especially if faded. Some former NYC cars just had the PC added.
I never seen that red / white PC logo in real trains. It was never appealing to me either.
I did a custom PC located somewhere on my link below. Probably in a video as well.
The road for the most part, has been scarce when modeled or MFG. in true "O".
I grew up in the PC era and remember the newly painted PC car arriving past Grasmere on Staten Island.
I know that Brooklyn guy Ben, hates that road, but what does he know anyway?

The hodgepodge nature of the real PC makes it fairly easy to model. Very simply, pretty much anything goes. The rolling stock was every shade of green and same for black motive power. Throw in period appropriate equipment from nearly any American railroad and wa-la, it's a PC train!
