There are so many I like that's a tough one for me to answer, but if push came to shove, I would pick this with either Southern Pacific or Cotton Belt painted on one end. Reminds me of when I was just a boy and my whole life was ahead of me.

Mine has to be the Lionel Warbonnet. Lionel did an entire series of Warbonnet freight cars and a caboose back in 2010 (I think). I didn't know about them until they were all sold out, and now the prices are astronomical!

So I assume the question only pertains to paint schemes and not slogans.
I’m more attracted to slogan cars which are mostly black, brown or boxcar red.

Reckon' I'm the odd man out again. Ever since I was a kid I liked the types of boxcars I saw around KC: Boxcar reds, browns, tuscan... the other loud/bright ones didn't show up much in the "work a day" world around KC I was exposed to.
The boxcar included with my original Lindberg Lines HO set I received as a kid in 1962 had a boxcar red C&NW boxcar in it. In fact, all of the cars in it were "typical"... (including a switch engine) so I loved it that set.

Along with the NYC's Pacemaker boxcars, you can't go wrong with the Rock Island's "Bankruptcy Blue"

Back in the late 70's I remember walking to school and seeing a yellow RailBox boxcar on the tracks. That was one good looking boxcar. I have the MPC version somewhere.

That SEABOARD just looks great IMO, but if I wasn't modeling SAL I'd be all over the Great Northern, great graphics and great colors.
